Boil the veggies
In a saucepan, bring 200ml of water to the boil. Add 1/2 carrot (diced) and 1/2 onion (sliced).
Simmer until vegetables are soft.
Add diced tofu
Add 50g mushrooms and 100g tofu (diced).
Add miso paste
Stir in 1 sachet of ENSO miso paste.
Garnish and serve
Garnish with spring onions.
Stir and serve steaming hot in soup bowls.
